Shrimp and Penne

Yield: 4 Servings
Ingredients
3 cups of dry penne, or similar pasta
1 lb. of medium shrimp, cooked, peeled and deveined
4 cloves of garlic, minced
1/4 cup of unsalted butter
4 Tbsp extra virgin olive oil
2 Tbsp of all-purpose flour
6 oz of chicken broth
Fresh parsley, minced (optional)
Shredded Parmesan cheese
Salt and Pepper to taste.
Directions
Cook pasta al dente.
Meanwhile, in a large pan, sauté the garlic in the butter and olive oil.
Stir in flour until blended; gradually add broth. Bring to a boil; cook and stir for about another 2 minutes or until thickened.
Stir in shrimp, cheese, and parsley; heat thoroughly. Salt and pepper to taste.
Once the pasta is ready, add about ½ cup of the pasta water to the pan if the sauce is too thick and make the sauce creamy.
Drain pasta; add the pasta to the shrimp mixture; toss to coat.
Cover with plenty of Parmesan, and cracked pepper.
Suggested Pairing
Look for a medium to full-bodied Chardonnay with some oak aging. The creamy texture and buttery notes of the wine will complement the buttery pasta and garlic flavors.
