  • The combination of salmon, potatoes, and peppers creates a delicious and well-balanced mix of flavors. The richness of salmon complements the earthy taste of potatoes and the sweet or slightly tangy notes of peppers, creating a harmonious blend on the palate.

  • This dish is incredibly easy to prepare. Everything is cooked on a single sheet pan, making it a convenient one-pan meal. You just need to chop the ingredients, toss them with some seasonings and oil, and then roast them in the oven.

  • Sheet-pan salmon with potatoes and peppers is a nutritious meal. Salmon is a great source of omega-3 fatty acids, which are beneficial for heart and brain health. Potatoes provide essential carbohydrates and vitamins, while peppers add vitamins C and A to the mix.


Tips


  • I would suggest cooking your fish in glass rather than metal, as glass bakeware helps cook the fish evenly while in the oven.

  • Bake your salmon uncovered, not covered.

  • Spices that Go Best with Salmon: paprika, garlic powder, brown sugar, Kosher salt, dried thyme, mustard powder, black pepper.



 
Sheet-Pan Salmon with Potatoes & Peppers

Yield: 2 Servings



Ingredients:

• 1 pound of Yukon Gold potatoes, cut into 3/4-inch pieces

• 3 tablespoons of extra-virgin olive oil

• 2 teaspoons of chili powder

• 1 teaspoon of ground cumin

• 1 lemon, zested and quartered

• 2 medium bell peppers, any color, sliced

• 1 medium onion, sliced

• 2 garlic cloves, sliced

• 1 ¼ pounds center-cut salmon fillet, cut into 4 portions

• Salt and pepper to taste

• Olive oil for coating the baking sheet

• Olives and Feta cheese to serve


Directions:


1. Preheat the oven to 425 degrees F. Slightly coat a large baking sheet with olive oil.


2. Add 1 tablespoon of oil, salt, and pepper in a medium bowl and toss the potatoes. Transfer the potatoes to the prepared pan, roast for 15 minutes, and keep the bowl.


3. Meanwhile, combine the chili powder, cumin, lemon, salt, and pepper in a small bowl. Place the peppers, onions, and garlic in the medium bowl used for the potatoes and add 2 tablespoons oil and 1/2 tablespoon of the spice mixture. Toss well to coat. With the remaining spice mixture, cover the salmon.


4. After 15 minutes, remove the pan from the oven. Add the pepper mixture and stir to combine everything. Roast for another 5 to 6 minutes. Remove from the oven; make space for the salmon, and add to the pan. Roast until the salmon is just cooked through, about 6 to 8 minutes. Serve with Feta and olives.
