Ratatouille

One of my favorite summertime dishes with fresh vegetables from our farmer's market. Ratatouille is a traditional vegetable dish that is not only delicious but also visually appealing. This dish captures the essence of rustic French cooking, combining the colors of fresh vegetables with fragrant herbs and spices. Ratatouille is a symphony of roasted eggplant, juicy tomatoes, tender zucchini, and bell peppers, flavors that you will not forget!

  • Choose fresh, ripe vegetables: Ratatouille relies heavily on the quality of the vegetables used. Select vibrant, ripe tomatoes, eggplants, zucchini, bell peppers, and onions to ensure the best flavors in your dish.

  • Consistent vegetable slices: To achieve a visually stunning presentation, it's important to slice the vegetables evenly and to a similar thickness. This allows them to cook uniformly and creates a visually pleasing layered effect.

  • Sauté vegetables separately: While it might be tempting to cook all the vegetables together, it's best to sauté them separately before combining. This ensures that each vegetable retains its unique flavor and texture. Sauté each vegetable until just tender, then set them aside.



 
Ratatouille

Ingredients:

  • 2 eggplants

  • 4 medium-sized heirloom tomatoes

  • 2 yellow squashes

  • 2 zucchinis

For the sauce:

  • 2 tablespoons olive oil

  • 1 diced, sweet yellow onion

  • 4 minced cloves garlic

  • 1 diced red bell pepper

  • 1 diced yellow bell pepper

  • 28 oz can of crushed fire-roasted tomatoes

  • 2 tablespoons chopped fresh parsley, about 8-10 leaves

  • 2 tablespoons Chopped fresh parsley

  • 2 teaspoons fresh thyme


Directions:


1. Slice the eggplant, tomatoes, squash, and zucchini into approximately 1/16 inch (1-mm) rounds, then set aside.


2.Sauté the onion, garlic, and bell peppers until soft, about 10 minutes, then add the crushed tomatoes.


3. Stir until the ingredients are fully incorporated. Remove from heat, then add the basil. Stir once more, then smooth the surface of the sauce with a spatula.


4. Arrange the sliced veggies in alternating patterns (for example, eggplant, tomato, squash, zucchini) on top of the sauce from the outer edge to the middle of the pan. Season with salt and pepper.


5. Cover with foil and heat in a 350˚F (180˚C) oven for 45 minutes until the vegetables are softened.

Suggested Pairing


Dry or off-dry rosé wine can be an excellent choice to complement the flavors of ratatouille. Look for a rosé with good acidity and fruity notes to balance the richness of the dish.
