From the farmer’s market to cooking everything in one pot, to making a delicious meal in 30 minutes. I used boneless, skinless chicken thighs, in addition to a vegetable medley and baby potatoes. I added some red wine to the chicken stock to make the base of the dish, and everything absorbs those delicious flavors.
What is great about One-Pot Mediterranean Chicken and Potatoes?
This dish typically includes a combination of chicken, potatoes, olives, tomatoes, garlic, herbs (like rosemary, thyme, or oregano), and olive oil. These ingredients work together to create a rich and flavorful meal.

With a mix of protein, carbohydrates, and vegetables all in one dish, it offers a balanced meal that can satisfy a range of dietary preferences and requirements.
Tips
Since this dish relies on the flavors of its ingredients, choose fresh and high-quality produce, chicken, and herbs for the best results.
If you have time, marinating the chicken in a mixture of olive oil, lemon juice, garlic, and herbs for a few hours or overnight can enhance the flavor and tenderness.
Use a pot or skillet that's large enough to comfortably hold all the ingredients without overcrowding. Overcrowding can prevent proper browning and cooking.
Start by searing the chicken on both sides to develop a golden-brown crust. This adds flavor to the dish.
When adding ingredients to the pot, consider layering them strategically. Potatoes should be at the bottom to absorb the flavorful juices, while chicken and other ingredients can be on top.
