Tips
If you're using vegetables like spinach or zucchini, make sure to squeeze out any excess moisture before adding them to the egg mixture. This will prevent the bake from becoming watery.
Feel free to experiment with different Mediterranean ingredients to suit your taste preferences. You can add ingredients like roasted red peppers, artichoke hearts, sundried tomatoes, or diced olives to enhance the flavor profile.
Fresh herbs like basil, oregano, or dill can elevate the flavors of your egg bake. Consider using them instead of dried herbs for a more vibrant taste.
For a richer texture, you can incorporate a creamy element into your egg mixture. Try mixing in a tablespoon or two of Greek yogurt, sour cream, or crème fraîche.
Mediterranean Egg Bake
Prep time: 10 minutes
Cook time: 40 minutes
Yield: 4 Servings
Ingredients:
1 small head kale, chopped
1 cup cherry tomatoes, or grape tomatoes
1 cup of mushrooms and zucchini
Chives
1/2 cup feta cheese crumbles
12 large eggs, beaten
3/4 tsp sea salt, to taste
Directions:
Preheat the oven to 375 degrees F.
Add the kale and cover the skillet. Cook until wilted, about 2 to 3 minutes.
Crack the eggs into a mixing bowl and whisk them until well-beaten. Whisk in the sea salt.
Pour the beaten eggs over everything and use a cooking spoon to gently stir until it appears as though all ingredients are evenly distributed.
Bake on the center rack of the preheated oven for 32 to 40 minutes, or until the eggs have set up and the edges of the casserole are golden-brown.
Allow casserole to cool 10 minutes before slicing and serving.
A crisp and lively Sauvignon Blanc can be an excellent choice. Its citrusy and herbal notes can accentuate the fresh flavors of the vegetables and add a zesty contrast to the richness of the eggs and feta cheese.
