Tips
Some of the pasta water is used to help create a smooth sauce, and the butter is melted in the water as well.
Use good, organic butter, or really splurge of the best butter you can find.
Grate the Parmesan cheese yourself rather than buying pre-shredded cheese. Freshly grated cheese melts better and yields a smoother sauce.
Fettuccine Alfredo
Prep time: 10 minutes
Cook time: 10 minutes
Yield: 4 Servings
Ingredients:
1 lb. of fresh fettuccine
1⁄2 lb. of unsalted butter (2 sticks)
1⁄2 lb. finely grated Parmesan (about 3 1⁄2 cups)
Directions:
1. Bring a 6-qt. pot of water to a boil and add some salt. Add fettuccine and cook, occasionally stirring, until pasta is al dente, about 2 minutes. Save about a cup of the pasta water.
2. Bring 3⁄4 of a cup of pasta water and the butter to a boil in a 12″ skillet; add the pasta, sprinkle with the cheese, and toss with tongs over medium-low heat until the pasta is creamy and coated about 2 minutes. Use a little bit more of the pasta water if dry.
3. Serve the fettuccine immediately on warm plates. Add extra Parmesan.
